Here we are with delicious Aamras ke Aloo recipe made from baby potatoes, raw mango and aromatic spices simmered in mango juice to add some extra flavours to your usual Potato recipe. You can serve Aamras ke Aloo with roti, paratha or rice.

Ingredients
- 500 gm Baby Potatoes
- 1 Mango (chopped raw)
- 5 cloves Garlic (chopped)
- 1 tbsp Ginger (chopped)
- 8 leaves Curry
- 250 ml Mango Juice
- 1 tsp Mustard Seeds
- 1 tsp fenugreek seeds
- 1 tsp Cumin (or jeera jeera)
- 1 tsp Heeng
- 1 tsp Turmeric Powder
- 1 tsp Coriander Powder
- to red chili powder (taste)
- to Black Salt (taste)
- 2 tbsp Oil

Instructions
- Heat oil in a pan, Add mustard seeds, jeera, Methi seeds, Heeng and roast the spices on low flames till start releasing their aroma.
- Add chopped ginger and garlic and saute on medium flame for one minute.
- Add raw mangoes followed by turmeric powder, red chilli powder & dhania powder. Mix well all the spices and saute for few seconds.
- Add baby potatoes, black salt & toss till it mixes well with all the masala.
- Add mango juice, cover the pan & let it cook on medium flame till potatoes become soft. Do not break the potatoes, try to keep them whole.
- Serve hot Aamras ke Aloo with your favourite Indian bread
Recipe Notes
- You can use normal size potatoes instead of baby potatoes like I do, just peel and cut them in little big size to use in Aamras ke Aloo recipe.
