About Achari Bhindi (Okra/Ladyfinger)
Achari Bindi/ Orka is simple and easy to make yet tempting and tasty. I have used mustard oil while preparing the stuffing which brings a completely different flavor I am also a fan of  Maharastrian Masala called "Goda Masala" which I generously use to stuff any vegetable.

Recipe Time & More
Ingredients
- 500 gm Ladyfinger (or okra, or bhindi okra bhindi)
- Stuffing (for)
- 1 tbsp Coriander Powder
- 1/2 red chili powder (tbp)
- 1-2 tsp Salt (or as per taste)
- 2 tbsp Mustard Oil (or stuffing for stuffing)
- 2 tbsp Masala (of goda)
- Gravy (or curd for curd)
- Masala (or dahi mdh dahi)
- Masala (i used mango pickle any pickle left over)
- 2 tbsp Mustard Oil (for frying)
- 1 tsp Cumin Seed

- 1-2 tsp Salt (or as per taste)
- 2 tbsp Mustard Oil (or stuffing for stuffing)
- 2 tbsp Masala (of goda)
- Gravy (or curd for curd)
- Masala (or dahi mdh dahi)
- Masala (i used mango pickle any pickle left over)
- 2 tbsp Mustard Oil (for frying)
- 1 tsp Cumin Seed

Instructions
- Cut top and bottom of Okra and slit the okra.
- Mix all the "For Stuffing" ingredients listed above and fill the okra. to get best results marinate it overnight.
- Take curd and whisk it add dahi masala or raita masala and left over masala from any pickle, I used home made mango pickle masala.
- In a wok or kadai, put mustard oil and let the cumin seeds splutter , add curd along with okra. close the lid let it simmer for 15 -20 minutes, keep stirring it in between.
