Ingredients
- to cup All Purpose Flour (or dough, or maida prepare dough maida)
- 1 tsp Sugar
- 1 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1-2 tsp Salt (or as per taste)
- 1/4 cup Yogurt (fresh thick, or curd curd)
- 2 tsp Oil
- Water (to knead luke as required)
- 2 large Potato Stuffing (boiled and peeled, or potato for potato)
- 1 Green Chillies (finely chopped)
- 1/2 tsp Red Chili Powder
- 1/4 tsp Garam Masala
- 1 inch Ginger (grated)
- 1/4 tsp Dry Mango Powder (aamchur dry powder)
- 1/4 tsp carom seeds (or ajwain ajwain)
- 2 tbsp Coriander (finely chopped)
- 1 large Onion (size chopped)
- 1-2 tsp Salt (or as per taste)
- 2 tsp Nigella Seeds (or garnishing, or kalonji for garnishing kalonji)
- 3 tbsp Coriander
- 2 tbsp Butter

Instructions
- Firstly, knead the dough for 10 minutes with ingredients listed for dough.
- cover with a moist cloth and rest for 2 hours in warm place.
- Meanwhile, in a mixing bowl prepare stuffing mixing the ingredients listed for stuffing.
- After 2 hours, pinch a ball sized dough.Fill the ball of dough with the stuffing and seal it properly.
- Apply oil on surface and dab the dough lightly and start rolling.sprinkle kalonji seeds and coriander leaves.
- Dry roast the kulcha on hot tawa from both sides till they become golden brown.
- Finally, spread some more butter and serve kulcha hot.
