Sev puri is one of the popular Indian chaat. The combination of papdi (crispy flat puri), sev (deep fried gram flour noodles), boiled potatoes (batata), moong (green beans), onion and assortment of chutneys like green chutney and tangy date tamarind chutney make it simply irresistible.

Ingredients
- 1/4 cup Moong (green beans, optional boiled)
- 2 Potatoes (boil, peel and mash medium size)
- 1 Onion (medium size finely chopped)
- 1 Tomato (medium size finely chopped)
- 1-2 tsp Salt (or as per taste)
- 1/2 tsp red chili powder
- 6 tbsp tamarind (khajur ki chutney)
- 4 tbsp Green Chutney
- Chaat Masala (for sprinkle)
- 1/2 cup Nylon Sev
- 16 Chaat (papdi flat puri)
- leaves Garnishing (or coriander some fresh chopped coriander for)

Instructions
- Prepare green chutney and khajur imli ki chutney according to their recipes in advance. Boil the potatoes and green moong beans in salted water. Keep all required ingredients ready before assembling the chaat.
- In mixing bowl mix all ingredients (potatoes, moong Dal, onion, tomato, salt, red chilli powder). Take plate and arrange all papdis on plate.
- Place 1/2 tablespoons prepared potatoes mixture on all over each papdis.
- Top each one with1/4 teaspoon of green chutney and then khajur imli ki chutney.
- Sprinkle sev n chat masala powder to taste over each Batata puri.
- Garnish with coriander leaves. Batata sev puri chat is ready to serve.
Recipe Notes
Serve this immediately to get the crispy and crunchy taste of puri and sev with chutney. Assemble it at the time of serving because it will turn soggy within few minutes.
