Ingredients
- 2 cup Rice (leftover )
- 4 tbsp Cheese (grated parmesan)
- 1 leaves Coriander (or parsley)
- 1 tsp Black pepper
- 2 Green Chillies (chopped)
- 1-2 tsp Salt (or as per taste)
- 1-2 tbsp Oil (for frying)
- 2 tbsp Corn Flour
- 100 gm Breadcrumbs
- 1 cup Peas (boiled)

Instructions
- In a medium bowl, whisk cheese, parsley, pepper and 1 teaspoon salt. Cover and chill. Mash leftover rice, add into the cheesy mixture. Add boiled peas. Allow rice mixture to cool for 1 hour.
- Make a thin paste of cornflour. If yop eat egg then use eggs. Pour breadcrumbs into a pile on one end of a cutting board.
- Dampen hands and roll rice mixture into 2.5cm balls, then dip in cornflour and coat each one with breadcrumbs. (Add one small piece of cheese and then make balls if you like)
- In a small, deep frying pan, heat olive oil. Fry rice balls approx. 6 at a time, turning often to ensure even browning. Drain on kitchen paper and serve warm.
