Ingredients
- 2 bowl Chickpea
- 1 Bay Leaf
- 1 Black Cardamom (बड़ी इलाइची)
- 2-3 piece Tea Bag (or Dried amla )
- Salt (as per taste)
For chhole
- 1/2 tsp Black Salt (काला नमक)
- Salt (नमक - as per taste)
- 1 tsp Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च)
- 2 tsp Coriander Powder (धनिया पाउडर)
- 1 tsp Cumin Powder (Roasted, भुना जीरा पाउडर)
- 1 tsp Dry Mango Powder (अमचूर पाउडर )
- Few Ginger (sliced or ginger powder)
- 2 tbsp Chole Masala (छोले मसाला )
- 2 tsp Desi Ghee (घी )
- Mint Leaves
For Chole Gravy
- 2 tbsp Oil (तेल)
- 1 tsp Turmeric Powder (हल्दी पाउडर)
- 1 tsp red chili powder (लाल मिर्च पाउडर)
- Chickpea Water (As required - छोले का पानी)
- 1 cup Mashed Chickpea
- 4 Mashed Potato
For Tikki
- 4-5 Boiled Potato
- 1/2 cup Ragi Powder (or Corn flour - 4 tbsp)
- 1-2 tbsp Rice flour
- 4 tbsp Refined Oil (तेल )
- 1 tsp cumin seed (जीरा)
- 1 tsp red chili powder
- Salt (as per taste)
For Garnishing/Serving
- 1 Onion chopped
- 1 Green Chillies (हरी मिर्च)
- 1 Lemon Juice
- 1 Tomato sliced (टमाटर)
- 1 handful Coriander (धनिया पत्ती)
- 1 cup Sweet Chutney (मीठी चटनी)
- 1 cup Green Chutney (हरी चटनी)
- 1 handful Papdi (पापड़ी)
- 1 cup Curd (दही)
- 1 tsp Red Chili Powder (लाल मिर्च पाउडर)
- 1 tsp Cumin Seeds Powder (Zeera)
- 1 tsp Black Pepper Powder (काली मिर्च पाउडर)
- 1 tsp Black Salt (काला नमक)

Instructions
Boiling
- Soak Chickpeas overnight. Put them in the pressure cooker, put Dry Amla, Bay leaf, Salt, Black Cardamom, in it and boil them by giving 2-3 whistles until chole turn soft.
- Put the boiled Chickpeas in the strainer and then put them in a bowl. Put Black Salt, Salt, Kashmiri Red Chili Powder, Coriander Powder, Mango Powder, Roasted Cumin Powder, Chhole Masala, Crushed Red Chili, Grated Ginger, Ghee on Chhole and mix them well.
For Chhole Gravy
- In a pan, put Oil, Turmeric Powder, Red Chili Powder, Boiled Chhole Water, mashed chhole and put it on gravy.
For tikki
- Combine all the ingredients in a bowl and mix well. Prepare tikki/ cutlets. Sallow fry until crisp from both sides.
- For Serving
- In a plate, put the Chhole, place crispy tikkis, add some Sweet Chutney, Green Chutney, Crushed Papdi, thick Curd. Add Chopped onions, sliced tomatoes, lemon juice and lemon wedges. Again put some chhole, Sweet, and Green Chutney on it. put some Red Chilli Powder, Black Pepper Powder,
- Black Salt and garnish it with some Namkeen Sev on it and serve the very tasty Chaat.
