Ingredients
- 150 gm Millet (little)
- 2 Eggs
- 85 gm Honey
- 60 gm Grated Carrot
- 90 gm Brown Sugar
- 105 gm Coconut Oil
- 4 gm Baking Powder
- 2 gms Gms Psyllium Husk (psyllium husk)
- 5 gm Lemon Zest
- 2 gm Cinnamon Powder
- 30 gm Raisins
- Frosting (for)
- 1/4 cup Yogurt (greek style)
- 1/3 cup Cream Cheese
- 2 tbsp Honey

Instructions
- Dry roast the little millet, allow it to cool down and grind to a coarse powder, should be of Bombay rava texture.
- Mix the dry ingredients ground millet, baking powder, Psyllium Husk, cinnamon powder and half quantity of sugar together.
- In another bowl add eggs and half quantity of sugar and whisk until yellow.
- Next add coconut oil and honey and mix it well.
- Now add the dry ingredients in three batches and whisk together.
- Mix in grated carrots, raisins and lemon zest.
- Transfer to baking pan.
- Bake for 30 minutes in 180 degree Celsius preheated oven.
- For frosting, beat yogurt and cream cheese along with honey until smooth. Spread over the cake and enjoy.
