Rice kheer or Indian rice pudding is a very popular dessert serve on all festivals and special occasion. Ingredients
- 1 cup Basmati Rice (or rice long grain or any rice â)
- 3 cup Milk (full fat â)
- 1/2 cup Sugar (â or taste)
- 1 tsp Cardamom Powder (â)
- 1 tbsp Chia Seeds
- 1/2 cup Seeds (or nuts chopped nuts and)

Instructions
- Wash the rice under running cold water and soak them in enough water for 20-30 minutes. Discard the water after soaking time and keep aside.
- Boil the milk in a heavy bottom pan. Once it starts boiling, add rice.
- Stir well and cook on low flame for 20-25 minutes or till the rice become tender and cooked. Stir occasionally to make sure that rice or milk is not sticking to the pan.
- When the rice cooked and can be mashed easily add sugar, cardamom powder, chia seeds and chopped nuts. Stir it well to mix all the ingredients.
- Let it simmer for 6 to 7 minutes on medium flame so the sugar get dissolved completely and the chia seed also get mixed with it.
- Once done, garnished with some chia seeds and serve it warm.
Recipe Notes
- Some people like chilled kheer so Keep it in fridge before serving till it get chilled. You can serve the rice pudding along with your meal or after the meal. It tastes good when served warm with pooris.
- You can use brown rice to make this delicious Rice Pudding Recipe with chia seeds. Leftover rice can also be used to make rice kheer, as it will take less time to cook and taste even better.
