Kathal known as Jackfruit is a huge tree larger than a Mango tree. It is largely cultivated in the tropical regions of Indian subcontinent.
Kathal is now easily available in every city and its a very tasty option for those who are purely vegetarians.This kathal ki sabji is spicy,juicy and tangy.
Kathal is a good source of potassium,magnesium and iron,this means its really good for kids as well as adults.This sabji is very easy to make and you can have this with paranthas or simple roti.
This sabji is my childhood's favorite sabji and now its my kids favorite also.So here goes the easy peasy recipe of Kathal ki sabji-

Ingredients
- 1/2 piece Kathal Pieces - 1/2 Kg (peel and cut it into small pieces kathal)
- 1 cup Oil (for deep frying)
- 1 tsp Cumin Seeds
- 2 Onions (thinly sliced medium sized)
- 3 Tomato (chopped medium sized)
- 1 Green Chillies
- 5 cloves Garlic (finely chopped)
- 1-2 tsp Salt (or as per taste)
- 1/4 tsp Sugar
- 2 tsp Red Chili Powder
- 1 tsp Coriander Powder
- 2 tsp Dry Mango Powder (dry)
- 1 tsp Turmeric Powder
- 2 cup Coriander (finely choppedfor garnishing. fresh)

Instructions
- Firstly take a wok add 1 cup oil and heat it up. Now take the small pieces of jackfruit and deep fry them.
- When the pieces starts turning translucent in color take them out on an absorbent paper and keep aside. Now take another wok add 2 tsp oil and add cumin seeds in it.
- After that add onions,garlic and green chily and fry them. When the onions starts turning pink in color add chopped tomatoes and mix it well. Add sugar in it.
- Stir it till the tomatoes become soft . Now add salt,turmeric powder,red chili powder,coriander powder and mix it.(do not add dry mango powder now)
- When the masala starts leaving oil add kathal pieces in the masala and again mix it. Now add mango powder and green coriander leaves and mix it again. Your Kathal Ki Sabji is ready to enjoy.
