Ghiya is something which does not appeal everyone but ghiya/lauki kofta is surely something to look forward to especially because of its amazing taste, texture and is also guilt free as we are not deep frying kofta today but airfrying in my air fryer. Further these koftas are drenched in no onion, no garlic gravy which is super rich and creamy. Let's see the recipe.

Ingredients
For Kofta
- 1 piece Lauki (Ghiya (bottle gourd))
- 2 tbsp Gram Flour (Besan)
- 2 tbsp Semolina (Suji)
- 1 tsp Salt
- 1 tsp cumin seed (jeera)
- 1/2 tsp Red Chili Powder
- Oil (for greasing)
Gravy:
- 2 tsp Oil
- 2 piece Cardamom
- 1/2 piece Black Cardamom
- 2-3 piece Cloves
- 1 tsp cumin seed
- 250 gm Tomato
- 1/4 cup cashews
- 1 tsp Kashmiri red chili powder
- 1/2 tsp Garam Masala
- Coriander (for garnishing)
- Salt (as per taste)
- Red chili powder (as per taste)
- Coriander Powder (as per taste)

Instructions
To prepare Kofta
- Peel the lauki/ bottle gourd. Grate it.
- Squeeze the grated lauki and collect the juice in a bowl or mug. Keep the juice aside for later use.
- Mix all the ingredients for making the koftas with the grated lauki except oil.
- Make small round shaped balls.
- Place the balls in preheated airfryer and airfry at 180 degrees for 15 min till they are golden brown on all sides.
For the Gravy
- In a kadai, heat oil and sauté all spices. Add in cut tomatoes along with cashew nuts. cook till skin of tomato becomes soft.
- Cool down the mixture a bit and remove the skin of all tomatoes. Grind the mixture to prepare thick puree.
- Heat 1 tsp oil add cumin seeds and let it splutter.
- Add Kashmiri red chili powder and add in tomato puree.
- Add all salt, coriander powder, turmeric powder, red chilli powder mix well.
- Cook till gravy start leaving oil from the edges.
- Add about 1 cup of water.
- Stir and simmer for 10-12 minutes on low flame. Lastly, add the airfryed koftas. Cook for further 5 min.
- Switch off the flame, cover and let them be in the curry for a few minutes so that koftas will absorb all the flavors from the curry.
- Garnish with coriander leaves and serve lauki kofta hot with rotis, naan or jeera rice.
