Ingredients
- 2 cup Quinoa (cooked)
- 1 cup Chickpeas (canned or boiled, add more if you desire)
- Feta Cheese (for garnishing)
- 1-2 large Cucumber (diced ones)
- 1 cup Cherry Tomato (halves)
- 1/4 cup Mint (chopped)
- 1/2 cup Parsley (chopped)
- 4 tbsp Olive Oil
- 4-5 cloves Garlic (fresh minced)
- 1/2 cup Lemon Juice (dabur hommade)
- 1-2 tsp Salt (or as per taste)
- 1/4 cup Spring Onions (chopped)
- 1/2 tsp Black Pepper (or as per taste)

Instructions
- Wash Quinoa thoroughly and boil it in the 1:2 ratio. 1 cup Quinoa to 2 cups of water. You can boil it in vegetable stock for more flavour.
- Put all your greens and tomatoes in a salad bowl. Add the cooked quinoa to it.
- Prepare your lemon vinaigrette by adding 2 Tbsp olive oil, 1/2 cup lemon juice and 4 cloves of minced garlic. Mix well.
- Add the vinaigrette to the greens and quinoa and toss it well. Garnish with crumbled feta cheese.
