Paanch Puran Potato Brinjal Fry is one of my favourite vegetarian dish. Paanch Puran means 5 spice. It is one of the most used spice ingredients in a Bengali household. I love this combo of vegetable. It is easy and quick to prepare and taste delicious and flavourful.

Ingredients
- 2 Potato (â)
- 150 gm Brinjal (â)
- 2 Red Chillies (green â slit)
- 1 Onion (â medium chopped)
- 1 Tomato (medium chopped)
- 1 tbsp Paanch Puran €“ 1 Tbsp (paanch puran â)
- 1/2 tsp Turmeric Powder (â)
- 1/4 tsp Chilly Powder (â or as per your taste)
- 1/2 tsp Coriander Powder (roasted â)
- 1 tsp Garam Masala (â)
- 1-2 tsp Salt (or as per taste)
- 2 tbsps Oil (â)
- Water (as required)

Instructions
- Peel the potatoes and sliced them length wise medium thickness.
- Cut the brinjal length wise medium thickness and soak in water until used.
- Heat oil in a pan. Add the paanch puran and let it splutter.
- Add chopped Onion, chillies and saute till it turns soft. Add tomatoes and saute till it turns mushy.
- Add the turmeric powder, chilly powder, roasted coriander powder and saute for a min.
- Add the potatoes, brinjal, salt to taste, mix well and saute for about 5 mins on high heat.
- Reduce the heat to low, cover the pan and cook for 10-15 mins or until the potatoes and brinjal is cooked completely.
- Add the garam masala powder, give a quick stir and take off the heat.
- Serve as a side dish for rice, chapattis etc.
