Paprika Spiced Potato souffle made in Coconut oil makes a deadly combination. Potatoes go perfectly with nutty flavour of coconut oil and tastes just yumm. It's smooth and spicy.
The bread crumb coating gives a crunchy texture to the sides and top is crunchy. But the inside is feathery soft and melt in mouth.
Not to forget it's nutritive value. I call it power packed breakfast souffle at home.
My Mom simply loves this because she likes it very much and she hardly gets the eggy flavour.
Do try it for weekend breakfast or brunch or as a side dish for lunch and dinner. Amazing isn't It!! ðŸ˜ðŸ˜

Ingredients
- 2 tbsp Coconut Oil
- 350 Mashed Potato (boiled n g)
- 100 ml Milk
- 125 Cheese (grated g)
- 2 Eggs (separated and at room temperature)
- 1-2 tbsp Parsley (chopped fresh)
- 1 tbsp Spring Onions (chopped)
- 1 tbsp Capsicum (chopped)
- Pinch Turmeric
- 1-2 tsp Salt (or as per taste)
- Black Pepper (freshly ground)
- 1-2 tsp Coconut Oil (coat)
- 2-3 cup Bread Crumbs (or brown tbspns brown coat)
- 1 tsp Parsley (chopped garnish)
- 1 tsp Paprika (garnish)

Instructions
- Grease the cups with Coconut oil and coat with Brown bread crumbs and keep them aside.
- Preheat oven on 200C.
- In a large bowl add; mashed potatoes + spring onions +capsicum + parsley +2 egg yolks +salt +black pepper+ cheese and mix them well.
- Heat milk and coconut oil with a small pinch of turmeric for golden colour (u can omit if u prefer) till oil melts.
- Mix this liquid to potato mixture.
- Now in a seperate bowl beat 2 egg whites till soft peaks and fold in with the ready mixture.
- Pour in ready cups and garnish with parsley n paprika and bake for 25-30 min or till puffed up and golden color.
