Ingredients
- 2 Potato (medium boiled)
- 1 tbsp Butter (soft)
- 2 tbsp Cheddar Cheese (grated)
- 1-2 tsp Salt (or as per taste)
- 1 cup All Purpose Flour (extra for dusting)
- 3 tbsp Milk (full fat)
- 1 tsp Kasuri Methi (crushed)
- 1/4 tsp White Pepper Powder
- Brushing (or ghee ghee for)
- Garnishing (or ajwain ajwain for)

Instructions
- In a bowl take completely mashed potatoes . Add butter , grated cheddar cheese , salt , white pepper powder and whisk all together .
- Add crushed Kasuri methi .
- Add the seived flour and knead using fingers to form crumbles . Add milk and knead to a smooth dough.
- Now place the dough on a butter paper and wrap it completely . Refrigerate for 30 minutes .
- Unwrap the chilled dough after 30 minutes . Dust flour if required and roll the dough to a medium thickness large roti . Now cut cookies using a cookie cutter or any lid . Cut shapes as you prefer.
- Place all the cookies on a butter paper / baking sheet spread on a tray / plate . I baked these cookies in a idli cooker . I Preheated the cooker by adding salt as a bed inside the cooker . Preheating time 10 minutes in low to medium heat .
- Brush Ghee on the cookies and sprinkle Ajwain over them . Place the cookie tray inside the preheated cooker . Cover the cooker and bake for 15 minutes in medium heat. The edges turn crispy and the colour and texture changes . Golden spots visible .
- Potato cheesy cookies are ready . Serve warm for the best taste . Serve with a cup of hot masala chai . Enjoy .
