About Pudina Rice (Mint Rice) Recipe
Mint leaves have lots of incredible health benefits. We use mint leaves to prepare chutney, side dish, raita, biriyanis and for flavored rice varieties as well. It’s good for digestion, prevents respiratory issues, reduces depression and helps to lose weight. It’s anti-inflammatory, anti-oxidant and anti-bacterial properties help to improve skin and overall.
Everyone in my family loves Pudina rice, the flavor and the green color texture itself makes it more inviting. It’s not only healthy but very tasty as well. This recipe is more like the South Indian style. You can have this rice with plain curd / yogurt or Beetroot raita as well. I added only potato to this rice, you can add any vegetables you want (Eg: Carrot, Beans, Green peas etc.,).

Ingredients
- 1 leaves Mint (â)
- 1 cup Rice (â)
- 1 inch Ginger (chopped â)
- 3 cloves Garlic (chopped â)
- 1 tbsp Grated Coconut (â)
- 1 Green Chillies (increase according to your spice level â)
- 1 tbsp Coriander Seeds (or cumin cumin and â)
- 1 tbsp Desi Ghee (â)
- 1 tbsp Oil (according to your preference â)
- 1 tsp Mustard Seeds (â)
- 4 cashews (â)
- 2 cloves €“ 2 (â)
- 2 Cardamom (â)
- 1 Bay Leaf (â)
- 1 Onion (finely chopped â medium size)
- 1 Tomato (finely chopped â medium size)
- 1 Potato (finely chopped â medium size)
- 1 tbsp Chili Powder (or turmeric turmeric and â)
- 1-2 tsp Salt (or as per taste)
- Water (or rice â based on rice quantity)

Instructions
- Get all the ingredients ready and soak the rice first. Take cleaned mint leaves, chopped ginger, garlic, green chilies, coconut, cumin and coriander seeds in a mixer jar.
- Add 1 tbsp of water, then grind and make a smooth paste out of it.
- Now take a pressure or electric cooker, add oil and ghee, once it is heated, add the mustard seeds, cashew nuts, cardamom, cloves and bay leaves. Saute it for few mins
- Add onion and saute well, until the onion color changes.
- Add Tomato, saute for another few mins until the tomato blends.
- Then add potato and mix everything well.
- After a few mins, add the mint paste, salt, turmeric and chili powder. Mix everything well.
- Once it is done, add the rice and give a good mixture.
- After a min, add water and close the cooker.
- After 2 whistles (in case of using a pressure cooker), turn off the burner. Wait until the pressure comes down. Open it and give a good gentle mix, add mint or coriander leaves for topping.
- Serve this delicious pudina rice with curd or raita.
