To make the flower edible we have to remove the stem and stigma of the petals. Pumpkin flowers are known to be full of health benefits it is rich in Vitamin B9 It is bright yellow colour. I made pumpkin flowers with onion and potato. This is a different taste.

Ingredients
- 10-12 Pumpkin Flowers
- 1 cup Potato (chopped)
- 1/2 cup Onion (chopped)
- 1 tsp Garlic (chopped)
- 1/2 tsp Turmeric Powder
- 1/2 tsp Chilli Powder
- 1 tsp Cumin Powder
- 2 Green Chillies
- 1/2 tsp Panch Phoran
- 1 tbsp Mustard Oil
- 1-2 tsp Salt (or as per taste)

Instructions
- Wash thoroughly pumpkin flowers then chop and keep separate.
- Heat mustard oil add red chilli, panch phoran and chopped garlic. Saute for a few seconds.
- Add chopped potato and onion then stir continuously. Add turmeric powder, cumin powder, red chilli powder and salt. Stir for a few seconds.
- Add chopped flowers and green chillies. Sprinkle with little water and cook for a minute. Now it is ready to serve.
