Ingredients
- 1 cup Red Pumpkin (300 grams)
- 1/2 Onion
- 3 cloves Garlic
- 1/2 inch Ginger
- Vegetable Stock (2 cups 500 ml (refer notes))
- 1-2 tsp Salt (if required, or as per taste)
- Black Pepper Powder (to garnish)
- sprig Parsley (to garnish)
- 1/2 tsp Cream (to garnish fresh or creme freshe)
- 1 tsp Pumpkin Seeds (to garnish)

Instructions
- Heat oil in a pan and once hot add in finely chopped onion, garlic and ginger, saute till lightly golden and no raw aroma remains.
- Now add in the pumpkin cubes along with the vegetable stock and mix well.
- Pressure cook on high for 4 whistles, then switch off the gas and allow the cooker to cool down.
- Open the lid and puree the mixture to a smooth consistency.
- Check for salt and add a little if required.
- Pour out into two serving bowls, garnish with toppings of choice and Serve Hot!
Recipe Notes
Use a vegetable stock cube and dissolve it in hot water, your stock is ready to be used.
