Ingredients
- 12 Eddoe
- 1 Onion (sliced)
- 2 Tomato (chopped)
- 1 teaspoon Ginger garlic paste
- 1 pinch asafoetida (optional)
- ¾ teaspoon Turmeric Powder
- Salt (to taste)
- ¾ teaspoon Red Chili Powder
- ¾ teaspoon Coriander Powder
- ¾ teaspoon Garam Masala
- 2 Green Chillies (slit)
- Whole red chilli (dry – 2)
- 2 tbsp Oil (+ to deep fry)

Instructions
- Cut eddoe into sticks like fries. Wash & soak in salted water for 10-15mins. Wash again & use towel to soak water from eddo sticks
- Heat oil in a kadhai and deep fry eddo sticks till they become golden in color. Drain onto paper towel and keep it aside.
- Heat 2 tbsp oil in a kadhai. Add whole red chilies, asafetida, ginger & garlic paste and sauté it for 1 min.
- Add sliced onions and stir until they become translucent.
- Add turmeric powder, salt, red chili powder, coriander powder and garam masala.
- Now add chopped tomatoes and green chilies. Mix well and cook it for 3-4 mins.
- Add fried eddo sticks and mix well. Cover it with the lid and cook it for 8-10 mins.
- Serve as a side dish with Chapati or paratha.
