Sponge gourd contain high amount of dietary fibre, vitamin c, zinc, iron and magnesium. It is very tender vegetables and easy to cook. I made a simple curry with less ingredients.

Ingredients
- 250 gm Sponge Gourd
- 1 Capsicum (chopped)
- 2 Green Chillies
- 2 tbsp Poppy Seeds
- 1 tbsp Mustard Oil
- 1 bunch Coriander
- 1 tsp Radhuni Seeds
- 1-2 tsp Salt (or as per taste)

Instructions
- Wash and chop sponge gourd and chop capsicum. Boil the turai and keep separate. Make a paste with green chillies, poppy seeds and coriander leaves.
- Heat a pan add 1 tsp mustard oil and radhuni seeds. Add capsicum and boiled turai, couscous paste and salt.
- Cook for 5-7 minutes with covering the lid. It can be served with steamed rice or chapati.
