Ingredients
- 1.5 cup All Purpose Flour (Maida / 180 grams)
- 1/2 cup Sugar (powdered / 100 grams)
- 100 gm Butter (unsalted Soft )
- 2 cup Cashews (chopped)
- 1 tsp Vanilla Essence
- 1/4 tsp Salt
- 1 to 2 tbsp Milk
- 1 cup Butter (unsalted )
- 3 ½ - 4 cups Confectioner's sugar (confectioner's sugar, sifted)
- 4 tbsp Strawberry syrup
- 1 tbsp Vanilla extract
- 2 tbsp Heavy cream ( or whole milk)
- 1 pinch Salt
- 1/2 cup Mint leaves (chopped)

Instructions
- Preheat oven to 180 Degree C. Line a baking sheet with parchment paper or foil. Set aside.
- Take butter, sugar, salt, vanilla in a bowl and whip till creamy.
- Add in flour, cashews and mix well.
- Add in milk and make it into a soft dough.
- Take small portion of dough, shape it into long length wise or desired shape.
- Add a crushed cashew on the shaped dough, press cashews slightly, arrange it in a foil or parchment lined baking tray and bake for 14 to 15 mins.
- Remove it and let it cool down completely. Store in a air tight container.
- Now, Cream together butter and ½ cup of confectioner's sugar at a time. After each cup of sugar has been added, add strawberry syrup 1 tablespoon at a time,
- Then add vanilla and then beat on high for about 20 seconds to lighten the frosting.
- Add half-and-half, one tablespoon at a time until the buttercream has reached a consistency where it will hold it's shape.
- Add pinch of salt and whip on high for a final 20 seconds. Add chopped mint leaves and mix it well.
- Now, fill the piping bag with strawberry and mint buttercream and keep it aside. Take cashew finger cookie and pipe the buttercream on it.
- Now cover the top with other cashew finger cookie.
- It is ready to serve.
Recipe Notes
- To use once refrigerated strawberry and mint buttercream, slowly allow to reach room temperature and then beat on low speed until the buttercream is smooth before using.
- You can also use different fillings as per desire.
- You can also flavour the cashew finger with pistachio, cardamom, almonds etc.
- Store cashew fingers in air tight container to increase its shelf life.
