Ingredients
- 3 Spring Onion (bulbs)
- 3 bulbs Spring Onion (grrens above )
- 1/2 leaves Coriander ( including roots)
- 1 tbsp Coriander Seeds
- 1 tbsp Cumin Seeds
- 1/2 tbsp Peppercorns
- 3 piece Lemon grass
- 3 lime Kaffir Lime Leaves- 3Small (kaffir )
- 1 tbsp Lemon Zest
- 3 Green Chillies
- 6 Garlic
- 1 piece Galangal
- 1 small Onion
- 1-2 tsp Salt (or as per taste)
- to Sugar (taste)
- 2 tbsp Oil
- 200 ml Coconut Milk
- 4 florets Broccoli
- 4 Mushrooms
- 4 Beans (long)
- 1/2 Green Bell Pepper
- 1/2 Red Bell Pepper
- 3 Baby Corn
- 1 tbsp Lemon Juice

Instructions
- Heat kadai and dry roast cumin, coriander and peppercorns and keep aside
- Clean all the ingredients
- In a blender jar add roasted spices, lemongrass, Kaffir lime leaves, onion, spring onion greens and bulb, coriander leaves, galangal, lemon zest, garlic and a make a smooth paste
- Clean and cut all the vegetables.
- In a kadai add 1tbsp of oil and add all the cut vegetablesand little salt and saute up to little soft. remove from kadai and keep aside.
- In the same pan add one more tbsp of oil and add curry paste and saute up to raw smell goes
- Add saute vegetables to the masala and cook for a couple of mins. Then add 1/2cup water and coconut milk and mix
- Add salt, sugar and allow to boil. Cover this cook up to all the veggies are cooked properly.
- At last add lemon juice and mix
- Serve hot with steamed rice or fried rice
