We eat watermelon, after eating red fleshy portion we throw the watermelon rind. We never thought it can be eaten and there is also refreshing treat. The white part of watermelon is crunchy similar to cucumber. Watermelon rind contains plenty of water, chlorophyll for blood building and amino acid. It is more healthy compare to pink or reddish part. Remove the bright green skin take the white portion and cook in any form. We can grate, we can grind or we can cut in cubicle form and use in dessert or any other recipe. I made some salty and spicy patties.

Ingredients
- 1/2 cup watermelon rind (grated )
- 1/4 cup gram flour
- 1/4 cup rice flour
- 1/4 cup semolina
- 1 tsp red chili powder
- 2 Green Chillies (chopped )
- 1 tsp Garam Masala
- 1 tsp kasuri methi
- 1/4 tsp asafoetida powder
- Coriander (chopped)
- Oil (for frying)
- Salt (to taste)

Instructions
- Cut the watermelon into small pieces.
- Take out the red fleshy portion for eating.
- This is the remaining outer layer don't throw.
- Peel off the bright greeny skin only take the white portion.
- Grate the white portion.
- Make a dough mixing with grated watermelon rind, gram flour, rice flour, semolina, red chili powder, garam masala powder, asafoetida, salt, kasuri methi, coriander leaves, chopped green chili, 2 tbsp oil, and water to kneed.
- Make the patties with both palm and fry.
- Serve the patties along with tea/coffee.

- Watermelon rind contains 95 percent food value.
- Lost recipe watermelon rind using more than 100 years ago. We should introduce this to our upcoming generation.
