Chicken Cordon Bleu is a classic chicken breast recipe loaded with oozing, melted Swiss cheese. Chicken breast or ham slices (for Pork Cordon Bleu) are wrapped around the cheese and rolled in breadcrumbs, then fried or baked to create a flavorful, cheesy, crunchy, and crispy dish perfect for casseroles and chicken dinner meals. How to prepare chicken breast for easy Cordon bleu recipe: Cut the chicken breast lengthwise to get 2 halves. Refer to the picture
Put one half of chicken breast piece between the cling film and beat with moderate pressure using a rolling pin or the back of a wooden spoon. Whack repeatedly till the meat flattens out to approx 1/6th of an inch.
Mix the black pepper powder, garlic powder and salt in a bowl and generously sprinkle onto both sides of the flattened meat. Gently rub the spices into the meat using a round motion with your fingers.
Layer one slice of cheese on the seasoned meat and follow by layering one slice of ham.
Place the layered meat on a cling film. Start rolling it from one end so that the cheese is held tightly inside the meat. Roll it few times so that it becomes firm, tight and compact.Twist both ends of the cling film, place in freezer for 30 mins.
After 30 mins heat the oil in a Shallow fry pan on low flame. Remove the cling wrap and dip the chicken roll first into rice flour(healthier option) or all-purpose Flour, next dip it into the beaten egg and lastly roll it in breadcrumbs.
Gently lower the roll into the warmed oil, cooking on each side for 2 mins till the crumbs attain a golden brown colour. You will also need to use kitchen tongs to hold the roll vertically and fry in the oil for 2 mins per side, per roll.
Once all the sides are fried, remove onto a paper towel to soak the excess oil.
Let stand for 10 mins, then very gently cut pieces using a sharp serated knife.
Repeat all the steps for the next piece of chicken breast as well.
What to serve with chicken Cordon bleu - Preheat the oven to 200 degrees celsius for 10 mins. In a bowl mix the baby potatoes, baby carrots, garlic cloves, seasonings and oil and toss well.
Place them on a baking sheet in the baking tray and roast them for 20-25 minutes.
Serve alongside your Chicken Cordon Bleu.
Notes
Traditionally pork (ham) is used for this recipe, but feel free to use any ham of choice.
Also traditionally Swiss cheese is used as a filling, however, I couldn’t find any so used smoked gouda cheese. When in doubt always use smoked cheese.
Ideally regular all purpose flour (maida) can be used for coating, however, if you have rice flour on hand do use it, it adds a lot of crunch to the final fried product.
You can serve this dish with various sides like herbed rice, steamed vegetables like peas, Brussel sprouts and broccoli and even with a white sauce.
