Cut the chicken breast lengthwise to get 2 halves.
Put one half of chicken breast piece between a cling film and beat with moderate pressure using a rolling pin or the back of a wooden spoon. Whack repeatedly till the meat flattens out to approx 1/6th of an inch.
Mix the black pepper powder, garlic powder and salt in a bowl and generously sprinkle onto both sides of the flattened meat. Gently rub the spices and lime juice into the meat with your fingers, using a circular motion.
Now, heat oil in a pan and gently lower all the pieces of chicken into the oil, cook on medium low heat till the meat is cooked through, meaning it gives easily when poked with a sharp knife.
Allow the chicken to turn golden on both sides.
Then remove onto a serving dish and set aside.
Now to make the mustard sauce, In the same pan add in water, chopped parsley, minced garlic, pepper powder and mustard paste.
Mix well with a wooden spoon and allow this mixture to reduce to half, if your sauce doesn't thicken, sprinkle in a little flour and mix in quickly to avoid formation of lumps.
Add in butter and mix again.
Spoon the sauce on top of the prepared chicken and serve along with your favourite sides, I used some couscous salad to go along with it.
